For highland farmers, a tube of com lam is the equivalent of a lunch box, providing a quick and easy-to-carry meal. Com lam is prepared with mountain rice-a special type of thick, short-grained rice grown in upland terraced paddy fields. A stalk of bamboo is cut into pieces about 40cm in length and filled with rice and water. The stalk is then sealed and placed over a fire until the surface is charred. At this time, the cook uses a knife to whittle away the stalk's outer layer. The charred bark is peeled away to reveal a thin, inner skin of bamboo, which sticks to the rice inside. These tubes are cut into slices of about 3cm in length and served with "muoi vung", a mixture of rock salt and roasted sesame seeds.
